About: Zephyr is a summer squash variety with a slim, pale yellow body that looks like it's been dipped in pale green paint, like an easter egg. They have a delicate texture, and a nutty flavor.

Season: Summer

Storage: Unwashed, in a bag, in the fridge.

Cleaning: Rinse with water.

Preparing: Summer squash generally have thin, tender skin so there's no need to peel (in fact, the skin holds most of the nutritious components). Just cut of the stem and go.

Preparations: Shaved raw, grilled, sautéed, baked, puréed, stir-fried, roasted, stuffed.
